Join us at BeetCommunity Agrigento for a hands-on culinary journey led by Bahar Jasim. Bahar is founder and chef of Babilonia Eats, the first Iraqi restaurant right here in Palermo and a long-time  supporter and friend of BeetCommunity. 

Through these incredible flavours, Bahar channels his passion of cooking into sharing the deep history, rich culture, and genuine hospitality of Iraq.

In this interactive workshop, you won’t just eat; you’ll learn the art of the Dolma.

What is Dolma?

Dolma is the crown jewel of Iraqi hospitality, traditionally crafted for lively family gatherings and celebrations. It’s a beautiful, fragrant dish made of vegetables, including grape leaves. Each of them is carefully stuffed with a perfectly seasoned mixture of rice, herbs, and spices, then slow-cooked to perfection. Every family has its secret recipe, and Bahar is sharing his with us! This workshop is entirely vegan-friendly!


How the Evening Will Go


18:00 Welcome & Introduction: Grab a spot, meet the group and get introduced to our guest chef, Bahar.

18:15 Hands-On Preparation: Roll up your sleeves! You’ll learn the traditional stuffing and rolling methods for Dolma while enjoying a glass of wine.

20:00 The Slow Cook: While our giant pot of Dolma simmers on the stove, we'll hang out, open up the conversation, while preparing ourselves for the tasting.

21:00 The Grand Feast: Time to reap the rewards of your hard work. Sit down, relax, and enjoy the dish.

  • All Ingredients: Everything needed to craft a spectacular vegan Iraqi Dolma.
  • Plenty of Food & Drink: A full, hearty meal and some wine to pair with it as well as Ayran (a milk / mint drink similar to Kefir without acidity) that we usually drink it traditionally with Dolma
